Zwickel Rick is a sour ale inspired by the flavor of pickles. We start by hand-slicing boatloads of fresh cucumbers to throw into the mash. We add a few pounds of sea salt in the boil. After that, we inoculate it with our house sour culture. After a long maturation process, we “dry hop” it with fresh dill, and add more cucumber juice to sweeten it a little. The result is a liquid pickle.
